Creative Ways to Cook with Maple Syrup

Here are some of our favorite ways to cook with maple syrup this spring, inspired by the flavors of the season and the syrup made right here in Caledonia County. 


Maple Vinaigrette for Spring Greens 

As soon as local greens return to the farmers market, it’s time to break out this easy homemade dressing. 

Whisk together: 

● 2 tbsp Vermont maple syrup (Golden or Amber grade) 

● 1 tbsp Dijon mustard 

● 2 tbsp apple cider vinegar 

● 4 tbsp olive oil 

● Pinch of salt and pepper 

Toss with baby spinach, arugula, or mixed greens and top with goat cheese, berries, or toasted nuts. It’s light, bright, and Vermont-made. 

Maple Lemon Glazed Chicken 

Sweet, tangy, and perfect for the grill or oven. 

Marinade:

● 1/4 cup Vermont maple syrup (Amber or Dark) 

● 2 tbsp lemon juice 

● 2 cloves garlic, minced 

● 1 tbsp soy sauce 

● 1 tsp fresh thyme 

Marinate chicken thighs or breasts for 30–60 minutes, then grill or bake until it reaches an internal temperature of 165 degrees Fahrenheit. The sugars in the syrup help form a beautiful caramelized glaze while keeping the meat juicy. 


Maple Ricotta Toast with Strawberries 

A simple but elegant breakfast or brunch dish. 

Spread: 

● Fresh ricotta or whipped cottage cheese 

● Sliced strawberries 

● Drizzle of Golden grade maple syrup 

● Sprinkle of lemon zest or fresh basil 

Serve on sourdough or multigrain toast for a fresh and flavorful morning bite.

Maple Granola

Homemade granola is easy, affordable, and makes a great springtime gift when packaged in a mason jar with a handwritten tag. 

Ingredients: 

● 3 cups rolled oats 

● 1/2 cup chopped nuts 

● 1/3 cup Vermont maple syrup (Amber or Dark)

● 1/4 cup coconut oil or butter 

● 1 tsp cinnamon 

● 1/2 tsp salt 

Bake at 325°F for 25–30 minutes, stirring once. Add dried fruit after baking if desired.

Maple Mint Lemonade 

Skip the refined sugar—Vermont maple syrup makes a naturally sweet and refreshing spring drink.

To make: 

● Juice of 4 lemons 

● 1/3 cup Vermont maple syrup (Golden or Amber) 

● 4 cups cold water 

● Handful of fresh mint leaves 

● Ice, lemon slices to garnish 

Muddle mint, mix all ingredients, and chill. Perfect for porch sipping or spring gatherings.
